Greek Lamb Meatballs with Tzatziki

Herby lamb meatballs with cool tzatziki over a fresh tomato–cucumber salad.

⏱️ Instant Greek Lamb Meatballs

This version keeps the Tzatziki and Salad incredibly simple and focuses on getting the meatballs mixed and into the oven immediately.

Ingredient

For the Meatballs

1 lb ground lamb


1 small onion, finely chopped


2 cloves garlic, minced


1 egg


2 Tbsp almond flour


1 tsp dried oregano, 1 tsp ground cumin, ½ tsp sea salt, ½ tsp black pepper

Cooking Prep

1 Tbsp butter or beef tallow (for greasing the pan)

For the Tzatziki

½ cup Greek yogurt (full fat)


½ cucumber, finely diced


1 clove garlic, minced


1 Tbsp fresh dill (or 1 tsp dried dill)


1 Tbsp fresh lemon juice, Salt and pepper

For the Salad

1 cup cucumber, diced


1 cup cherry tomatoes, halved


1 tsp red wine vinegar, 1 Tbsp extra virgin olive oil, Salt and pepper

Garnish

Fresh parsley or mint, chopped (optional)

🏃‍♂️ Quick Assembly (15–20 Minutes Total)

  1. Prep & Preheat (5 Minutes): Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper or foil and lightly grease it with the 1 Tbsp of butter/tallow.

  2. Mix & Form Meatballs (5 Minutes): In a large bowl, combine all the Meatball ingredients: ground lamb, chopped onion, minced garlic, egg, almond flour, oregano, cumin, salt, and pepper. Mix gently until just combined. Quickly form into small, 1 to $1\frac{1}{2}$ inch meatballs and place them on the prepared baking sheet.

  3. Bake (15 Minutes): Bake for 12–15 minutes, or until browned and cooked through.

  4. Make Tzatziki & Salad (5 Minutes): While the meatballs are baking, use the time to prepare the sides:

    • Tzatziki: In a small bowl, quickly mix the Greek yogurt, diced cucumber, minced garlic, dill, lemon juice, salt, and pepper.

    • Salad: In a separate bowl, toss the diced cucumber and halved cherry tomatoes with the red wine vinegar, olive oil, salt, and pepper.

  5. Serve: Remove the hot meatballs from the oven. Serve them over the fresh salad, topped with a generous dollop of the freshly mixed Tzatziki. Garnish with parsley or mint, if desired.
