Chicken Nuggets (Parmesan-Pork Rind Crust)

Crispy, savory nuggets made from a juicy mix of ground chicken and pork, coated in a golden crust of Parmesan and pork rinds.

Ultra-Simplified Oven Chicken-Pork Nuggets

Ingredients

  • ¼ lb ground chicken

  • ¼ lb ground pork

  • ½ egg, beaten

  • 2 Tbsp grated Parmesan

  • ¼ tsp garlic powder

  • ¼ tsp salt

  • ⅛ tsp pepper

  • ⅓ cup crushed pork rinds

  • ½ Tbsp butter, melted

Macronutrient Estimate (for 2 servings)

  • Protein: ~28g

  • Fat: ~29g

  • Carbs: ~2g

Preparation

  1. Preheat oven to 400°F. Foil-line sheet.

  2. Mix chicken, pork, egg, Parmesan, garlic powder, salt, pepper.

  3. Form 6-8 nuggets; coat in pork rinds.

  4. Place on sheet; drizzle butter. Bake 15-20 min until 165°F.

  5. Serve with ketchup or mustard.

Notes

  • Hands-off: No skillet, chilling. Prep: 4 min.

  • Simplified: Skipped onion powder, paprika, Italian seasoning, garnishes, oil.
