Keto Garlic Herb Beef Kebabs with Creamy Feta and Blue Cheese Sauces


Ingredients

Garlic Herb Beef Kebabs:

  • 1.5 lb (680g) beef sirloin or ribeye, cut into 1-inch cubes

  • 3 tbsp olive oil

  • 2 tbsp coconut aminos (or low-sodium soy sauce)

  • 3 cloves garlic, minced

  • 1 tbsp fresh rosemary, finely chopped

  • 1 tbsp fresh thyme, finely chopped

  • 1 tsp smoked paprika

  • ½ tsp black pepper

  • ½ tsp salt

  • 8 wooden or metal skewers

  • 1 medium zucchini (8 oz or 225g), cut into ½-inch rounds

  • 1 red bell pepper (4 oz or 120g), cut into 1-inch pieces


Creamy Feta Sauce:

  • 4 oz (115g) feta cheese, crumbled

  • ¼ cup heavy cream

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 clove garlic, minced

  • ½ tsp dried oregano

  • ¼ tsp black pepper


Creamy Blue Cheese Sauce:

  • 4 oz (115g) blue cheese, crumbled

  • ¼ cup heavy cream

  • 2 tbsp sour cream

  • 1 tbsp olive oil

  • 1 tsp white vinegar

  • ¼ tsp black pepper


Instructions

1. Prepare Beef Kebabs:

  • In a large bowl, combine olive oil, coconut aminos, minced garlic, rosemary, thyme, smoked paprika, black pepper, and salt. Add beef cubes, toss to coat, and marinate in the fridge for 30 minutes (or up to 2 hours).

  • Preheat grill or oven to 400°F (200°C). If using wooden skewers, soak them in water for 20 minutes.

  • Thread beef, zucchini, and red bell pepper onto skewers, alternating pieces (about 4-5 beef cubes and 3-4 veggie pieces per skewer).

  • Grill kebabs for 8-10 minutes, turning occasionally, or bake on a parchment-lined baking sheet for 10-12 minutes, until beef reaches 135°F (57°C) for medium-rare.


2. Make Creamy Feta Sauce:

  • In a blender or food processor, combine feta, heavy cream, olive oil, lemon juice, garlic, oregano, and black pepper. Blend until smooth, adding 1-2 tbsp water if needed for desired consistency. Transfer to a small bowl and chill until serving.


3. Make Creamy Blue Cheese Sauce:

  • In a blender or food processor, combine blue cheese, heavy cream, sour cream, olive oil, white vinegar, and black pepper. Blend until smooth, adding 1-2 tbsp water if needed. Transfer to a small bowl and chill until serving.


4. Serve:

  • Serve 2 kebabs per person with both feta and blue cheese sauces on the side for dipping or drizzling. Garnish with fresh parsley or extra herbs if desired.


Notes:

  • Check coconut aminos and cheese labels for no added sugars or fillers.

  • For extra fat, serve with a side of avocado or drizzle sauces generously.

  • Adjust cooking time for desired beef doneness (e.g., 145°F/63°C for medium).
