Keto Bacon-Wrapped Chicken Breast with Creamy Side Salad
Ingredients
For the Bacon-Wrapped Chicken
4 boneless, skinless chicken breasts (about 1.5 lbs/680g)
8-12 slices bacon (2-3 slices per breast, depending on size)
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil (for searing)
For the Creamy Side Salad
4 cups mixed greens (spinach, arugula, or romaine)
1/2 cup cucumber, sliced
1/4 cup cherry tomatoes, halved (optional, keep minimal for strict keto)
1/4 cup crumbled feta cheese
1/4 cup mayonnaise
2 tbsp sour cream
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 clove garlic, minced
Salt and black pepper, to taste
2 tbsp chopped fresh dill or parsley (optional, for garnish)
Instructions
For the Bacon-Wrapped Chicken
Preheat Oven:
Preheat oven to 375°F (190°C).
Season Chicken:
Pat chicken breasts dry with paper towels. Season each with garlic powder, smoked paprika, salt, and black pepper.
Wrap with Bacon:
Wrap each chicken breast with 2-3 slices of bacon, tucking the ends underneath to secure. Ensure bacon overlaps slightly to cover the chicken.
Sear the Chicken:
Heat olive oil in an oven-safe skillet over medium-high heat. Place bacon-wrapped chicken seam-side down and sear for 2-3 minutes per side until bacon is golden.
Bake:
Transfer skillet to the preheated oven. Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (75°C). Optionally, broil for 1-2 minutes to crisp bacon further.
For the Creamy Side Salad
Prepare the Dressing:
In a small bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, minced garlic, salt, and black pepper until smooth. Adjust seasoning to taste.
Assemble the Salad:
In a large bowl, combine mixed greens, cucumber, cherry tomatoes (if using), and feta cheese. Drizzle with the creamy dressing and toss to coat. Sprinkle with fresh dill or parsley (if using).
Serve
Slice bacon-wrapped chicken breasts and serve alongside the creamy side salad. Optionally, garnish chicken with extra black pepper or herbs.
