Keto Grilled Lemon Garlic Shrimp Skewers
Ingredients (Serves 4):
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
3 garlic cloves, minced
1 lemon (juice and zest)
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions:
In a bowl, mix olive oil, garlic, lemon juice, lemon zest, smoked paprika, salt, pepper, and red pepper flakes.
Add shrimp, toss to coat, and marinate for 15-30 minutes in the fridge.
Preheat grill to medium-high (400°F/200°C).
Thread shrimp onto skewers (soak wooden skewers in water for 20 minutes if using).
Grill skewers for 2-3 minutes per side until shrimp are pink and opaque.
Garnish with parsley and serve with lemon wedges.
