Keto Grilled Lemon Garlic Shrimp Skewers


Ingredients (Serves 4):

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 lemon (juice and zest)

  • 1 tsp smoked paprika

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp red pepper flakes (optional)

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)


Instructions:

  1. In a bowl, mix olive oil, garlic, lemon juice, lemon zest, smoked paprika, salt, pepper, and red pepper flakes.

  2. Add shrimp, toss to coat, and marinate for 15-30 minutes in the fridge.

  3. Preheat grill to medium-high (400°F/200°C).

  4. Thread shrimp onto skewers (soak wooden skewers in water for 20 minutes if using).

  5. Grill skewers for 2-3 minutes per side until shrimp are pink and opaque.

  6. Garnish with parsley and serve with lemon wedges.
