Keto Steak and Grilled Veggies


Servings: 2

Cook Time: 15 minutes

Total Time: 25 minutes


Ingredients

  • Steak:

    • 2 ribeye or sirloin steaks (6-8 oz each)

    • 1 tbsp avocado oil

    • 1 tsp garlic powder

    • 1 tsp smoked paprika

    • Salt and black pepper to taste

  • Veggies:

    • 1 zucchini, sliced into rounds

    • 1 bell pepper (any color), cut into strips

    • 1 cup mushrooms, halved

    • 2 tbsp olive oil

    • 1 tsp Italian seasoning

    • Salt and pepper to taste


Instructions

  1. Prep the Steak:

    • Pat steaks dry with paper towels. Rub with avocado oil, then season both sides with garlic powder, smoked paprika, salt, and pepper. Let sit at room temp for 10 minutes.

  2. Prep the Veggies:

    • In a bowl, toss zucchini, bell pepper, and mushrooms with olive oil, Italian seasoning, salt, and pepper.

  3. Grill:

    • Preheat grill to medium-high (400°F/200°C).

    • Place veggies in a grill basket or on skewers. Grill for 8-10 minutes, turning occasionally, until tender and slightly charred.

    • Grill steaks for 3-4 minutes per side for medium-rare (135°F/57°C internal temp). Adjust time for desired doneness.

  4. Serve:

    • Let steaks rest for 5 minutes before slicing. Serve alongside grilled veggies.
