Beef & Veggie Skillet
Here’s a simple and tasty recipe for Beef and Vegetable Skillet that you can whip up for an easy dinner. It’s a one-pan dish, so cleanup is minimal!
Ingredients:
1 lb (450g) ground beef
1 medium onion, diced
1 bell pepper (any color), diced
1 medium zucchini, chopped
1 cup diced tomatoes (canned or fresh)
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp paprika (optional, for flavor)
1 tbsp olive oil (or any cooking oil)
Optional: shredded cheese, fresh parsley, or hot sauce for topping
Instructions:
Heat the pan: Place a large skillet over medium heat and add the olive oil.
Cook the beef: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
Add aromatics: Stir in the diced onion and garlic. Cook for 2-3 minutes until the onion softens.
Add vegetables: Toss in the bell pepper, zucchini, and diced tomatoes. Stir well to combine.
Season: Sprinkle in the salt, pepper, and paprika (if using). Mix everything together.
Simmer: Let the mixture cook for 8-10 minutes, stirring occasionally, until the vegetables are tender but not mushy.
Taste and adjust: Check the seasoning and adjust with more salt or pepper if needed.
Serve: Spoon it onto plates as is, or top with shredded cheese, chopped parsley, or a drizzle of hot sauce if you like a kick.
