Keto Bacon and Egg Muffins
Ingredients:
6 large eggs
4 slices of bacon
1/2 cup shredded cheddar cheese
1/4 cup heavy cream
Salt and pepper to taste
Optional: chopped chives or parsley for garnish
Instructions:
Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tin with 6 liners or grease it well.
Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove, drain on paper towels, and crumble into small pieces.
Mix the Eggs: In a bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
Assemble the Muffins: Divide the crumbled bacon and shredded cheddar cheese evenly among the muffin cups. Pour the egg mixture over the bacon and cheese, filling each cup about 3/4 full.
Bake: Place the muffin tin in the oven and bake for 20-25 minutes, or until the eggs are set and slightly golden on top.
Serve: Let them cool for a few minutes, then remove from the tin. Garnish with chopped chives or parsley if desired, and enjoy!
