Beef Tacos

Ingredients:
For the Taco Meat:
1 lb (450g) ground beef (80/20 or leaner)
1 tbsp olive oil
1 small onion, finely chopped (optional, omit for stricter low-carb)
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper (optional, for heat)
1/4 cup water or beef broth
For the Taco Shells/Base:
8 large lettuce leaves (e.g., romaine or butter lettuce) or 4 low-carb tortillas (store-bought or homemade with almond flour)
Toppings (choose your favorites):
1 cup shredded cheddar or Mexican blend cheese
1 avocado, diced or mashed into guacamole
1/2 cup sour cream
1/2 cup salsa (no added sugar)
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Optional: diced tomatoes, jalapeños, or hot sauce (keep portions small for low-carb)
Instructions:
Cook the Beef:
Heat olive oil in a large skillet over medium-high heat.
Add the chopped onion (if using) and cook for 2-3 minutes until softened.
Add the ground beef and cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Drain excess fat if needed.
Stir in the garlic and cook for 1 minute until fragrant.
Season the Meat:
Add chili powder, cumin, smoked paprika, salt, black pepper, and cayenne (if using) to the beef. Stir to coat evenly.
Pour in the water or beef broth and simmer for 3-5 minutes, stirring occasionally, until the liquid reduces and the flavors meld. Taste and adjust seasoning if desired.
Prepare the Base:
If using lettuce leaves, wash and pat them dry. Arrange 2 leaves per serving as "taco shells."
If using low-carb tortillas, warm them slightly in a skillet or microwave according to package instructions.
Assemble the Tacos:
Spoon the seasoned ground beef into the lettuce leaves or tortillas.
Add your preferred toppings: cheese, avocado, sour cream, salsa, cilantro, etc.
Squeeze fresh lime juice over the tacos for extra flavor.
Serve:
Plate the tacos and serve immediately with extra toppings on the side if desired.
