Low-carb Beef Tacos

Ingredients:

  • For the Taco Meat:

    • 1 lb (450g) ground beef (80/20 or leaner)

    • 1 tbsp olive oil

    • 1 small onion, finely chopped (optional, omit for stricter low-carb)

    • 2 cloves garlic, minced

    • 1 tbsp chili powder

    • 1 tsp ground cumin

    • 1 tsp smoked paprika

    • 1/2 tsp salt

    • 1/4 tsp black pepper

    • 1/4 tsp cayenne pepper (optional, for heat)

    • 1/4 cup water or beef broth

  • For the Taco Shells/Base:

    • 8 large lettuce leaves (e.g., romaine or butter lettuce) or 4 low-carb tortillas (store-bought or homemade with almond flour)

  • Toppings (choose your favorites):

    • 1 cup shredded cheddar or Mexican blend cheese

    • 1 avocado, diced or mashed into guacamole

    • 1/2 cup sour cream

    • 1/2 cup salsa (no added sugar)

    • 1/4 cup chopped fresh cilantro

    • 1 lime, cut into wedges

    • Optional: diced tomatoes, jalapeños, or hot sauce (keep portions small for low-carb)


Instructions:

  1. Cook the Beef:

    • Heat olive oil in a large skillet over medium-high heat.

    • Add the chopped onion (if using) and cook for 2-3 minutes until softened.

    • Add the ground beef and cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Drain excess fat if needed.

    • Stir in the garlic and cook for 1 minute until fragrant.

  2. Season the Meat:

    • Add chili powder, cumin, smoked paprika, salt, black pepper, and cayenne (if using) to the beef. Stir to coat evenly.

    • Pour in the water or beef broth and simmer for 3-5 minutes, stirring occasionally, until the liquid reduces and the flavors meld. Taste and adjust seasoning if desired.

  3. Prepare the Base:

    • If using lettuce leaves, wash and pat them dry. Arrange 2 leaves per serving as "taco shells."

    • If using low-carb tortillas, warm them slightly in a skillet or microwave according to package instructions.

  4. Assemble the Tacos:

    • Spoon the seasoned ground beef into the lettuce leaves or tortillas.

    • Add your preferred toppings: cheese, avocado, sour cream, salsa, cilantro, etc.

    • Squeeze fresh lime juice over the tacos for extra flavor.

  5. Serve:

    • Plate the tacos and serve immediately with extra toppings on the side if desired.
