Pork and Vegetable Stir-Fry (with Avocado Oil)

Ingredients:
1 lb (450g) pork (loin or tenderloin), thinly sliced
2 tablespoons avocado oil
1 bell pepper (any color), sliced
1 medium onion, sliced
1 cup broccoli florets
2 carrots, thinly sliced
3 tablespoons soy sauce
1 tablespoon honey or brown sugar
1 teaspoon garlic powder (or 2 minced garlic cloves)
Salt and pepper to taste
Instructions:
Prep the Pork: Season the sliced pork with a pinch of salt, pepper, and half the garlic powder.
Heat the Pan: Add 1 tablespoon of avocado oil to a large skillet or wok over medium-high heat.
Cook the Pork: Add the pork slices and stir-fry for 4-5 minutes until browned and cooked through. Remove the pork from the pan and set aside.
Cook the Veggies: In the same pan, add the remaining tablespoon of avocado oil. Toss in the bell pepper, onion, broccoli, and carrots. Stir-fry for 3-4 minutes until they soften slightly but stay crisp.
Combine: Return the pork to the pan with the vegetables. Add the soy sauce, honey (or brown sugar), and remaining garlic powder. Stir everything together and cook for another 2 minutes until well-coated and heated through.
Serve: Taste and adjust seasoning if needed.
