Pork & Brussels


Here’s a simple and tasty dinner recipe for Pork Tenderloin with Roasted Brussels Sprouts. It’s easy to prep, cooks in about 45 minutes, and uses minimal ingredients.


Ingredients (Serves 2-3):

  • For the Pork:

    • 1 pork tenderloin (about 1-1.5 lbs)

    • 2 tbsp olive oil

    • 1 tsp garlic powder

    • 1 tsp smoked paprika

    • 1 tsp salt

    • ½ tsp black pepper

  • For the Roasted Brussels Sprouts:

    • 1 lb Brussels sprouts, trimmed and halved

    • 2 tbsp olive oil

    • ½ tsp salt

    • ¼ tsp black pepper

    • 1 tsp balsamic vinegar (optional, for extra flavor)


Instructions:

  1. Preheat the Oven: Set your oven to 400°F (200°C).

  2. Prep the Pork: Pat the pork tenderloin dry with a paper towel. Rub it with olive oil, then sprinkle evenly with garlic powder, smoked paprika, salt, and pepper. Set aside.

  3. Prep the Brussels Sprouts: On a baking sheet, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them out evenly in a single layer.

  4. Roast the Veggies First: Place the Brussels sprouts in the oven and roast for 15 minutes to get a head start.

  5. Add the Pork: After 15 minutes, remove the baking sheet. Push the Brussels sprouts to the sides and place the seasoned pork tenderloin in the center. Return the sheet to the oven.

  6. Cook Together: Roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C) for medium doneness. The Brussels sprouts should be crispy and slightly browned by then.

  7. Rest and Serve: Remove from the oven. Let the pork rest for 5 minutes before slicing. Drizzle the Brussels sprouts with balsamic vinegar if desired. Serve the sliced pork alongside the roasted sprouts.
