Keto Cauliflower Chorizo Skillet


Ingredients (Serves 4):

•  1 medium cauliflower head (about 4 cups florets)

•  8 oz chorizo sausage, casing removed

•  1/2 cup diced onion

•  2 cloves garlic, minced

•  1 red bell pepper, diced

•  1 tbsp olive oil

•  1 tsp smoked paprika

•  1/2 tsp cumin

•  Salt and pepper to taste

•  1/4 cup chopped fresh cilantro (optional)

•  1/2 cup shredded cheddar cheese (optional)


Instructions:

1.  Prep Cauliflower: Cut cauliflower into small florets or pulse in a food processor for a rice-like texture.

2.  Cook Chorizo: In a large skillet over medium heat, crumble and cook chorizo until browned (about 5-7 minutes). Remove and set aside, leaving fat in the skillet.

3.  Sauté Veggies: Add olive oil to the skillet. Sauté onion, garlic, and bell pepper until softened (about 3-4 minutes).

4.  Add Cauliflower: Stir in cauliflower, smoked paprika, cumin, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until cauliflower is tender but not mushy.

5.  Combine: Return chorizo to the skillet, mix well, and heat through (about 2 minutes).

6.  Finish: Sprinkle with cheese (if using) and let melt. Garnish with cilantro (if desired).

7.  Serve: Serve hot as a main dish or side.

Tips:

•  Adjust spice with a pinch of chili powder or fresh jalapeño.

•  Swap chorizo for ground beef or turkey for a milder flavor, but add extra seasoning
