Garlic Butter Salmon with Asparagus
Ingredients:
2 salmon fillets (6 oz each)
1 bunch asparagus (about 12-16 spears), trimmed
3 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon lemon zest
1 tablespoon fresh parsley, chopped (optional)
Salt and pepper to taste
Instructions:
Preheat the Oven: Set your oven to 400°F (200°C).
Prepare the Asparagus: Place the asparagus on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Spread it out evenly, leaving space in the center for the salmon.
Season the Salmon: Pat the salmon fillets dry with a paper towel. Season both sides with salt, pepper, and a pinch of lemon zest. Place the fillets skin-side down in the center of the baking sheet.
Make the Garlic Butter: In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat.
Coat and Bake: Spoon half of the garlic butter over the salmon fillets and the rest over the asparagus. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
Serve: Remove from the oven, garnish with chopped parsley if desired, and serve hot.

Thomas Seyfried, Ph.D., is a biochemical geneticist, professor of biology at Boston College, and author of the groundbreaking book Cancer as a Metabolic Disease.
