Steak and Eggs
Ingredients (serves 1):
6 oz ribeye or sirloin steak
2 large eggs
1 tbsp butter
Salt and pepper, to taste
Instructions:
Season steak generously with salt and pepper.
Heat a skillet (preferably cast iron) over medium-high heat. Add 1/2 tbsp butter and let it melt.
Add steak to the hot skillet. Cook 3-4 minutes per side for medium-rare (adjust for desired doneness). Remove and let rest.
In the same skillet, reduce heat to medium. Add remaining 1/2 tbsp butter.
Crack eggs into the skillet. Cook 2-3 minutes for sunny-side up, or flip for over-easy. Season with salt and pepper.
Slice steak against the grain. Serve alongside eggs.
