Keto Chicken Avocado Salad
Ingredients:
1 cooked chicken breast (grilled, baked, or rotisserie), shredded or diced
1 ripe avocado, diced
2 cups mixed greens (e.g., spinach, arugula, or lettuce)
2 tablespoons olive oil
1 tablespoon mayonnaise (sugar-free)
1 teaspoon lemon juice
1/4 cup crumbled feta cheese (optional)
2 tablespoons chopped almonds or walnuts
Salt and pepper to taste
Instructions:
Prepare the Base: In a large bowl, toss the mixed greens with 1 tablespoon of olive oil, a pinch of salt, and a dash of pepper.
Mix the Dressing: In a small bowl, combine the mayonnaise, lemon juice, and remaining tablespoon of olive oil. Whisk until smooth. Adjust seasoning with salt and pepper to taste.
Assemble the Salad: Add the shredded chicken, diced avocado, feta cheese (if using), and chopped nuts to the greens. Drizzle the dressing over the top.
Toss and Serve: Gently toss everything together until evenly coated. Serve immediately.
