Beef & Veggie Skillet

Here’s a simple and tasty recipe for Beef and Vegetable Skillet that you can whip up for an easy dinner. It’s a one-pan dish, so cleanup is minimal!

Ingredients:

  • 1 lb (450g) ground beef

  • 1 medium onion, diced

  • 1 bell pepper (any color), diced

  • 1 medium zucchini, chopped

  • 1 cup diced tomatoes (canned or fresh)

  • 2 cloves garlic, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp paprika (optional, for flavor)

  • 1 tbsp olive oil (or any cooking oil)

  • Optional: shredded cheese, fresh parsley, or hot sauce for topping

Instructions:

  1. Heat the pan: Place a large skillet over medium heat and add the olive oil.

  2. Cook the beef: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if needed.

  3. Add aromatics: Stir in the diced onion and garlic. Cook for 2-3 minutes until the onion softens.

  4. Add vegetables: Toss in the bell pepper, zucchini, and diced tomatoes. Stir well to combine.

  5. Season: Sprinkle in the salt, pepper, and paprika (if using). Mix everything together.

  6. Simmer: Let the mixture cook for 8-10 minutes, stirring occasionally, until the vegetables are tender but not mushy.

  7. Taste and adjust: Check the seasoning and adjust with more salt or pepper if needed.

  8. Serve: Spoon it onto plates as is, or top with shredded cheese, chopped parsley, or a drizzle of hot sauce if you like a kick.

The Case Against Sugar

by Gary Taubes

ree

Published in 2016, The Case Against Sugar is a meticulously researched work by science journalist Gary Taubes, arguing that sugar—not just overeating or lack of exercise—is the primary driver of chronic diseases like obesity, diabetes, and heart disease. Taubes traces the history of sugar consumption, its rise in Western diets, and its metabolic effects, presenting it as a toxic substance when consumed in the quantities typical of modern diets.
