Lamb Skewers with Herb Olive Oil Dressing

Tender lamb cubes marinated in melted butter and grilled to perfection, finished with a fresh herb olive oil drizzle.

Ingredients

For the Lamb Skewers:

6 oz lamb shoulder or leg, cut into 1-inch cubes

1 Tbsp melted butter (for marinade)

½ tsp garlic powder

½ tsp dried oregano

½ tsp lemon zestSalt and pepper, to taste

Skewers (metal or soaked wooden)


For the Herb Olive Oil Dressing:

1½ Tbsp olive oil

1 tsp lemon juice

1 clove garlic, minced

1 Tbsp fresh parsley, finely chopped

1 tsp fresh mint or basil (optional), finely choppedSalt and pepper, to taste

Preparation

Marinate the lamb: In a bowl, toss lamb cubes with melted butter, garlic powder, oregano, lemon zest, salt, and pepper. Cover and marinate for at least 30 minutes (or up to 2 hours in the fridge).


Make the dressing: Whisk together olive oil, lemon juice, garlic, parsley, and mint (if using). Season with salt and pepper. Set aside.


Assemble the skewers: Thread the marinated lamb cubes onto skewers, leaving a little space between each piece.


Cook the skewers:

Grill: Preheat grill to medium-high. Cook skewers for 8–10 minutes, turning occasionally, until nicely browned and cooked to preferred doneness.


Oven: Preheat oven to 425°F (220°C). Place skewers on a foil-lined sheet and roast for 15–18 minutes, flipping halfway through.


Stovetop: Heat a grill pan over medium-high heat. Sear skewers in a bit of butter or oil for 8–10 minutes, turning to brown all sides.


Serve: Plate skewers and drizzle generously with the herb olive oil dressing. Garnish with extra herbs or lemon wedges if desired.
